Area: All the vineyards stand on the same south-, south-eastern facing slope and are surrounded by woods, which shelter them from the main winds. So, Bonsalto’s microclimate is one-of-a-kind, it is quite unique. Soil: clayey, alluvial. The skeleton consists of pebbles and water-polished sandstone. Quite full of macronutrients and poor in nitrogen, alkaline soils are not too fertile, so they provide good water supplies even in the draughty seasons.
Height: 95 to 310 metres above sea level
Harvest: strictly by hand, into boxes
Vinification and maturation: direct pressing of the whole grapes, followed by fermentation at a temperature of about 15°-16° C. After this stage, the wine is bottled with the addition of part of the must obtained from the same grape (Scacchi method), so that the second fermentation in the bottle can take place.
Distinctive features: lively, playful, intriguing, Rizz conquers with his spontaneity. The fragrances are fragrant: they recall yeast, croissants, fresh fruit freshly picked. Pleasant mouth, delicately sparkling, never too demanding but capable of amazing.
