Fattoria Bonsalto

The History

Fattoria Bonsalto was born in the early Seventies. Azelio, the grandfather, born into a large peasant family, after starting a successful iron and steel company decided to buy a farm, not far from his native village. A strong call back to the land for someone who had always regarded it as a “kind mother”, a bearer of resources, of subsistence and of healthy life. Over the years, wine had always been made for the family and sold in bulk to the local bottling companies.

The current project exploded in 2021 when Paolo, the founder’s son, came up with the idea to redeem the entire property and got his children involved in the business. An “extended” family as in the good old times, determined to take care of the farm, keeping its traditional spirit intact but giving it a future prospect.

Today the business of the Paci family is spearheaded by Valentina, Donata, Nicoletta and Leonardo but the new generation is peeping up already. Seven grandchildren, foreshadowing the continuation of a tradition but with a modern twist: Rebecca, Cesare, Bernardo, Guido, Allegra, Ottavia and Lavinia.

The Farm

``A Bonsalto il vino si è sempre fatto ed è sempre venuto ``bono``. Serviva solo qualcuno che avesse il coraggio di farlo sapere.`` (Wine has always been made at Bonsalto, and it's always turned out ``good``. We just needed someone who had the courage to get the word out.)

LANDSCAPE

Bonsalto looks like your typical Tuscan farm. The vineyard is at the centre of the project but it shares its space with other trees, from woods to olive trees, in a varied, biodiversity-rich ecosystem.

The Area

AREA

Fattoria Bonsalto stands right in the heart of Tuscany: in Montespertoli, near Florence. Even if the area is not one of the region's best-known, this is the home of vineyards, deeply rooted in local culture and in the people who live here.

VINEYARDS

The vineyards cover 22 hectares, with 18 of them producing grapes and three being replanted. Ancient Tuscan varieties are grown here, in the belief they are the secret to embody the local history and terroir at its best.

LAND

The hills the vines grow on have a clayey, alluvial soil and stand on the same south, south-east facing slope. The skeleton consists of pebbles and water-polished sandstone.

In addition to Sangiovese, which comes into its own here, there are other traditional grapes, sometimes rare, sometimes virtually unknown.

The artisanal method

We love to work with an artisan's outlook, without alterations, shortcuts or excesses. Fermentations are spontaneous, using wild yeasts only.

The style of our wines

The distinctive philosophy and style of our wines

We love authentic, genuine wines, wines that speak our language and tell about the land we live in. That’s why we only grow ancient Tuscan varieties and have no international cultivars.

We use different containers, depending on the grapes and the type of wine we want to make: steel, concrete, wood or cocciopesto. By no means do we want the technique or container to overshadow the flavour, taste or the very essence of the wine.
