SETTE GRAZIE
A vine variety and a wine that give a unique idea of Tuscany.
Denomination: IGT Toscana Malvasia Nera
Grape varieties: Malvasia Nera
Number of bottles: 1.900
Area: All the vineyards stand on the same south-, south-eastern facing slope and are surrounded by woods, which shelter them from the main winds. So, Bonsalto’s microclimate is one-of-a-kind, it is quite unique. Soil: clayey, alluvial. The skeleton consists of pebbles and water-polished sandstone. Quite full of macronutrients and poor in nitrogen, alkaline soils are not too fertile, so they provide good water supplies even in the draughty seasons. The Malvasia Nera is planted in vineyards oriented north-south.
Height: 140 metres above sea level
Harvest: strictly by hand, into boxes
Vinification and maturation: spontaneous fermentation in open vats, with wild yeasts only, with no temperature control. 25% of whole grapes and maceration with skins for 10 – 15 days. Maturation in used wood for 5 months, in cocciopesto amphoras for 5 months and in bottles for 10 months.
Distinctive features: as quintessentially Tuscan as it is unknown when in a single variety, we take the greatest care of Malvasia Nera and, day after day, we bring out its character. It smells of flowers, Mediterranean spices and black pepper. Lots of black pepper. A swig will wrap around a triumph of flavours, it will run fast, warm you up while also refreshing you.
