Area: All the vineyards are located on the same south-southeast facing slope and are surrounded by woods that protect them from the main winds. Bonsalto’s microclimate is therefore unique and entirely unique. The soils are clayey, with alluvial river deposits. The substratum is composed of pebbles and sandstone smoothed by water. The alkaline soils, fairly rich in macronutrients and low in nitrogen, are not overly productive and guarantee good water reserves even in dry years. The old Canaiolo vines are located in two parcels: in the northeast part of the estate (characterized by more clayey soils) and in the southern part (stony soils).
Height: between 150 and 200 meters above sea level
Harvest: strictly by hand, into boxes
Vinification and maturation: spontaneous fermentation in open vats, with only indigenous yeasts, without temperature control. 20% of the grapes are whole bunch and macerated on the skins for 12 days. Aged in used wood for approximately 6 months, followed by bottling.
Distinctive features: We like the idea of a Canaiolo that isn’t relegated to the role of a supporting actor, convinced that it can take center stage and reach unexplored heights. It has elegant and playful aromas: from flowers to small berries, from spices to Mediterranean scrub. The palate is silky, graceful, and decidedly flavorful.
